You might notice that I left the “one-dish” off this recipe, although technically you can eat it by itself. My teens do that. But I like to serve it with a veggie and baked pork chops (just marinate them in something you love for an hour or so, like lemon pepper sauce, and bake for 30 minutes on 350 degrees, at the same time as the recipe below. Am I lazy or what?)
A friend showed me her homemade mac ‘n cheese recipe about 23 years ago. She sliced her cheese. That is hard work. I take the super-lazy route and just buy grated cheese. My kids ask me to cook this dish frequently, and anytime there is a potluck, people ask, “Can you bring your mac ‘n cheese dish?” Yes, because I am lazy.

Recipe (play loosy-goosy with the ingredients, and make as much or as little as you like):
Elbow Macaroni (1 box, or more or less)
Grated cheese of your choice (lots – you can always use the leftover grated cheese for baked potatoes or tacos another night)
1 stick butter (you don’t have to use the whole thing)
Salt & pepper to taste
- Preheat oven to 350 degrees
- Lightly grease a casserole dish so it doesn’t stick (plan to fill it close to the top).
- Layer cooked macaroni and as much or as little grated cheese as you like until the dish is almost full.
- Make sure the top layer is cheese.
- Lightly whisk eggs, and add salt and pepper to taste. Pour all over the top of casserole dish contents.
- Liberally place pats of butter all over the top as well.
- Bake for 30 minutes.
Enjoy. But don’t tell anyone how lazy you are 😉
